Step 1: Preheat and Prep
Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Sauté the Spinach
In a skillet over medium heat, add a tablespoon of olive oil. Toss in the minced garlic and sauté for about 30 seconds, until fragrant. Add the spinach and cook until wilted — about 2–3 minutes. If you’re using frozen spinach, make sure it's completely thawed and squeeze out any extra water before tossing it into the pan.
Remove from heat and let it cool slightly.
Step 3: Mix the Filling
In a medium-sized bowl, combine the cream cheese, mozzarella, Parmesan, onion powder, black pepper, and a pinch of salt. Add the sautéed spinach and mix well until everything is evenly combined. This creamy, cheesy filling is the heart of your spinach puffs!
Step 4: Prepare the Puff Pastry
Roll out the puff pastry sheet on a lightly floured surface. Using a knife or pizza cutter, cut it into 12 equal squares.
Place about a tablespoon of filling in the center of each square.
Step 5: Assemble the Puffs
Fold each square into a triangle or bring all four corners up to the center and pinch to seal — either way works beautifully! Press the edges gently with a fork to ensure they stay closed while baking.
Brush the tops lightly with beaten egg for that gorgeous golden color.
Step 6: Bake to Perfection
Arrange the spinach puffs on your prepared baking sheet. Bake for 15–18 minutes or until they’re puffed up and beautifully golden brown.
Remove from the oven and let them cool slightly before serving — if you can resist biting into one right away!
