- 2 cups elbow macaroni
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup finely diced red onion
- 2 hard-boiled eggs chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Before serving, garnish with fresh herbs and a sprinkle of paprika, if desired.
Cook the macaroni according to package instructions, adding an extra minute for softer pasta. Drain, rinse with cold water, and toss with a little vinegar and salt while still warm.
