Ingredients
  

  • 2 cups elbow macaroni
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely diced red onion
  • 2 hard-boiled eggs chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions
 

  • Before serving, garnish with fresh herbs and a sprinkle of paprika, if desired.
  • Cook the macaroni according to package instructions, adding an extra minute for softer pasta. Drain, rinse with cold water, and toss with a little vinegar and salt while still warm.
  • In a large bowl, combine the macaroni, celery, red pepper, onion, and eggs.
  • In a small bowl, whisk together the mayonnaise, mustard, vinegar, sugar, salt, and pepper.
  • Gently fold the dressing into the pasta mixture until everything is coated.
  • Cover and refrigerate for at least 1 hour.
