Ingredients

  • 2 slices of whole-grain or sourdough bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 teaspoon vinegar for poaching eggs
  • ½ teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional, for extra spice
  • Fresh herbs parsley, chives, or cilantro for garnish
  • 1 teaspoon olive oil or butter optional, for toasting bread

Instructions

Step 1: Prepare the Toast

  • Toast the bread slices in a toaster, on a skillet with butter, or in the oven at 375°F (190°C) for 5-7 minutes until golden brown.
  • Set aside while you prepare the avocado and eggs.

Step 2: Mash the Avocado

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Add lemon juice, salt, and black pepper.
  • Mash the avocado with a fork until smooth or leave it slightly chunky, depending on your preference.

Step 3: Poach the Eggs

  • Fill a small saucepan with water and bring it to a gentle simmer.
  • Add 1 teaspoon of vinegar to help the egg whites set.
  • Crack an egg into a small bowl.
  • Swirl the simmering water with a spoon and gently slide the egg into the center.
  • Cook for about 3-4 minutes until the whites are set but the yolk is still runny.
  • Use a slotted spoon to remove the egg and place it on a paper towel to drain excess water.
  • Repeat for the second egg.

Step 4: Assemble the Avocado Toast

  • Spread a generous amount of mashed avocado onto each toasted bread slice.
  • Gently place the poached egg on top of each toast.
  • Sprinkle with red pepper flakes, additional salt, and fresh herbs for extra flavor.

Notes

Use Ripe Avocados – They should be soft but not mushy. A ripe avocado will yield slightly when pressed.
Choose the Right Bread – Whole grain or sourdough bread adds more texture and nutrients.
Perfectly Poached Eggs – Use fresh eggs for the best results. Vinegar helps keep the egg whites intact.
Customize Your Toppings – Add sliced cherry tomatoes, crumbled feta cheese, or smoked salmon for extra flavor.
Serve Immediately – Avocado oxidizes quickly, so enjoy your toast fresh for the best taste and texture.
